White Chocolate Oatmeal Pecan Cookies

Ingredients:

  • 1 cup butter
  • 1 cup light brown sugar
  • 1 cup white sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1.5 cups rolled oats
  • 2 cups white chocolate chips
  • 1 cup chopped pecans

Servings: 72 cookies


Directions:

  1. Preheat over to 350 degrees.
  2. Lightly grease cookie sheets.
  3. Big bowl
    1. Cream butter (1 cup), brown sugar (1 cup), white sugar (1 cup).
    2. Stir in eggs (2) and vanilla (2 tsp).
  4. Medium bowl:
    1. Sift together flour (3 cups), baking powder (1 tsp), baking soda (1 tsp), and salt (1 tsp).
  5. Stir in medium bowl contents into big bowl.
  6. Stir in rolled oats (1.5 cups), white chocolate chips (2 cups), and pecans (1 cup).
  7. Drop by tablespoons onto cookie sheets.
  8. Bake for 10 to 12 minutes or until lightly browned.
  9. Remove from baking sheets onto wire racks.
